LEMON SLAB CAKE


Eilen jäi joka torstaiset euron munkit kauppaan, kun löysin kivan tuntuisen ja helpon reseptin sitruunakakkuun. Rakastan sitruunaa! Maku on raikas ja rakenne kivan kostea. Kakku sopii mielestäni täydellisesti aurinkoisiin kevätpäiviin ja pääsiäisen alle. Reseptistä hieman poiketen ripottelin päälle toista rakastamaani makua, kookosta. Ommom! 

LEMON SLAB CAKE
220g unsalted butter, melted
340g caster sugar
2 eggs
1 cup sour cream
65ml lemon juice
2 tablespoons finely grated lemon grid
2 cups plain flour
2 teaspoons baking powder

Icing:
190g icing sugar, sifted
1½ tablespoons lemon juice
1 tablespoon water

Whisk the melted butter and sugar in a bowl. Add the eggs one at the time.
Whisk in the sour cream, lemon juice and lemon rind until smooth.
Sit together  the flour and baking powder and fold through the lemon mixture.
Stir until just combined and smooth.
Spoon the mix into a shallow 20x30cm cake tin.
Bake for 30min. or until golden and cooked trough when tested with a skewer.
Allow to cool tested before icing.

Yesterday I found that nice and easy recipe for a lemon cake. I love lemon! This lemon slab cake is the perfect cake for a sunny days of spring and Easter. It´s fresh and juicy. Unlike recipe, I sprinkled onto the cake the another taste I love, coconut. Ommom!
